Herbed Garlic Bread with Asiago Cheese


Ingredients: Brown and Serve Sour Dough Bread (see note)

                               allow 6 inches per person

                      Two medium garlic cloves per person

                      1 tablespoon butter or less per person

                      1 tablespoon olive oil or less per person

                      Two tablespoons chopped, fresh basil per person

                      Two tablespoons shredded asiago cheese per person


Note
: Costco carries the perfect bread for this. It is Seattle Sour Dough Brown and Serve™. There are five loaves in a bag. The loaves are relatively small and one loaf will serve 4 people.


Cut each loaf in half lengthwise and crosswise, keeping the lengthwise cut as even as possible. Stab each cut surface generously with a fork.


Melt butter with olive oil over low heat in a small saucepan. Peel and press garlic into butter/oil mixture and let stand in warm mixture for several minutes.


Spoon garlic/butter/oil mix evenly over each piece of bread. Cover with chopped, fresh basil and top with asiago cheese.

Bake at 350 degrees until cheese is well melted and beginning to brown—15 to 20 minutes.


I have used fresh rosemary, fresh thyme and fresh basil in this recipe and basil is the best. Shredded parmesan cheese works just as well but cheddar is too strongly flavored. You can also use more or less of each ingredient, depending on taste.
